KOMERU Rice flour Basque cheesecake.
A luxurious, melt-in-your-mouth Basque cheesecake made with carefully selected cheese.

This simple cheesecake is carefully baked one by one in our workshop, and is a gluten-free, guilt-free sweet that does not use any additives such as refined sugar or emulsifiers.

It has finally arrived at the KOMERU shop.

This time, the first 200 customers will receive a free KOMERU rice flour spaghetti or rice flour fettuccine (while supplies last).

The story behind its creation and a message from KOMERU's exclusive pastry chef

I love driving and was a professional motorcycle racer.
However, when I was 29 years old, I had an accident during a race, was rushed to the hospital, and suffered a cervical spinal cord injury. Although I was able to leave the hospital, both of my hands were still disabled, so much so that I couldn't even button my shirt. I was told that my nerves would never recover, and at the time, I only felt hopeless.

A few months later, I returned to racing. I won my first race when I was back in a condition that I was not completely recovered from. It was a real surprise for me and everyone around me. However, I got burned out and stayed away from racing.

Since retiring from racing, I have developed the habit of taking better care of my body and paying more attention to what I eat.

In 2023, I visited a cafe in Ishikawa Prefecture and had a Basque cheesecake made with rice flour and sweet sake. It was a shock.

It was so delicious that I visited two days in a row.
"I could eat a cake this delicious that doesn't use sugar or flour all the time," he thought. "So I thought I'd try making it at home."

I made many prototypes, changing the ingredients, amounts, and process little by little. When I found something I thought was it, my passion was ignited. The more I made it, the more delicious it became.

"We want to deliver delicious food safely and securely."

I bake cheesecakes every day, paying close attention to the ingredients, the method of preparation, and the texture. I'm confident that the cakes I make are uniquely my own, and I've put all of the experience I've gained through motorcycle racing into good use.

We put our heart and soul into making this Basque cheesecake, and hope that many people will enjoy it.
