Masayuki Okuda of Al Cecchiano is world-famous, having won the Grand Prix at the Gourmand World Cookbook Awards .

Chef Okuda has a long history with rice flour and knows many of the secrets to its deliciousness.

It is said that side dishes that go well with rice also go well with rice flour noodles.
This time, we will introduce a recipe for mentaiko and squid pasta using KOMERU rice flour spaghetti.
(Time required: 10 minutes)


【material】
KOMERU rice flour fresh spaghetti
・Mentaiko (spicy cod roe) 120g
・Squid (for sashimi) 40g
・6 pieces of Oba (green shiso) ・160g butter
・A little cooking sake (Japanese sake)

[Recipe]
1. KOMERU Boil the raw rice flour spaghetti.

2. Make the mentaiko butter. Open the mentaiko and remove it from the thin skin.

3. Mix an equal amount of unsalted butter with the mentaiko and make a pomade.

4. Add sake to 3. This will reduce the fishy smell of the mentaiko. The squid will be added after this, so the only thing that can reduce this smell is sake, not wine.

5. Cut or tear the shimeji mushrooms into small pieces. You can also use king oyster mushrooms.

6. Once the squid has been cut for sashimi, place it in bowl 3.

7. Chop the shiso leaves (or green shiso leaves).

8. Add the shimeji mushrooms to the boiling pasta water.

9. When the rice flour spaghetti has reached the same hardness as rice (about the boiling time indicated on the package),
Drain off the water and mix in the bowl (6) with the mentaiko, butter, and squid.
Place on a plate.

The key is to mix it all together.
Once mixed and sticky, add a little boiled water and separate the noodles.
The more viscous the noodles are the more delicious they will taste.
